Sofi Bakery hornea pan con cereales de pequeños agricultores ecológicos del norte de Europa. La panadería de barrio en Berlín-Mitte trabaja según el principio de una elaboración honesta y artesanal, con la menor cantidad posible de intervenciones, y concede especial importancia al origen, las materias primas y el proceso de elaboración.
En el centro se encuentra la aplicación de las ideas del movimiento Slow a la elaboración del pan. Sofi entiende la panadería como una tradición artesanal y, al mismo tiempo, se ocupa de las consecuencias de la producción industrializada de alimentos. La selección de los cereales comienza en el suelo, cuya importancia para la calidad de los granos se compara con la importancia del suelo para el vino. Sofi Bakery surgió de la colaboración entre Slowness y el cocinero y empresario gastronómico danés Frederik Bille Brahe.

Surprised at what the negative reviews are saying! I experienced very good service with friendly staff. I forgot my tea at the counter and went back for it, and the guy just smiled and laughed it off....

Skilful reception by the beauty taking orders and payments. Top quality food. The coffee was good, the matcha was “ok”. But the scrolls and bread are top-notch.

This place is all about amazing baking goods. Sweat and salty. They also offered a small basic breakfast. The coffee is also excellent and SOFI is also listed in the European coffee trip.
