Sofi Bakery cuit du pain avec des céréales provenant de petits agriculteurs biologiques d’Europe du Nord. La boulangerie de quartier située à Berlin-Mitte travaille selon le principe d’une boulangerie artisanale honnête, avec le moins d’interventions possible, et accorde une importance particulière à l’origine, aux matières premières et au processus de fabrication.
La transposition des idées du mouvement Slow à la fabrication du pain est au cœur de son approche. Sofi considère la boulangerie comme une tradition artisanale et s’intéresse aux conséquences de la production alimentaire industrialisée. La sélection des céréales commence par le sol, dont l’importance pour la qualité des grains est comparée à celle du sol pour le vin. Sofi Bakery est née d’une collaboration entre Slowness et le cuisinier et restaurateur danois Frederik Bille Brahe.

Sofi is such an amazing Café, the interior,the food and people. Met a very kind girl today who was also excited to take an aesthetic picture of her food. Evertime again!

Wir waren zu viert dort, leider war der Laden bereits sehr voll, weshalb wir uns leider nicht setzen konnten. Wir haben uns Kaffee und Matcha bestellen und beides war gut.
