Sofi Bakery cuit du pain avec des céréales provenant de petits agriculteurs biologiques d’Europe du Nord. La boulangerie de quartier située à Berlin-Mitte travaille selon le principe d’une boulangerie artisanale honnête, avec le moins d’interventions possible, et accorde une importance particulière à l’origine, aux matières premières et au processus de fabrication.
La transposition des idées du mouvement Slow à la fabrication du pain est au cœur de son approche. Sofi considère la boulangerie comme une tradition artisanale et s’intéresse aux conséquences de la production alimentaire industrialisée. La sélection des céréales commence par le sol, dont l’importance pour la qualité des grains est comparée à celle du sol pour le vin. Sofi Bakery est née d’une collaboration entre Slowness et le cuisinier et restaurateur danois Frederik Bille Brahe.

The establishment can't accommodate the number of people it serves, the bread is hard and the matcha lukewarm is horrible, there are better places in Berlin, it's not worth the hype.
The sandwiches and patisseries are really good quality!!! There were a lot of options, and the place is really nice and cozy. Service is not so good but other than that we had a good experience :)
