Sofi Bakery cuit du pain avec des céréales provenant de petits agriculteurs biologiques d’Europe du Nord. La boulangerie de quartier située à Berlin-Mitte travaille selon le principe d’une boulangerie artisanale honnête, avec le moins d’interventions possible, et accorde une importance particulière à l’origine, aux matières premières et au processus de fabrication.
La transposition des idées du mouvement Slow à la fabrication du pain est au cœur de son approche. Sofi considère la boulangerie comme une tradition artisanale et s’intéresse aux conséquences de la production alimentaire industrialisée. La sélection des céréales commence par le sol, dont l’importance pour la qualité des grains est comparée à celle du sol pour le vin. Sofi Bakery est née d’une collaboration entre Slowness et le cuisinier et restaurateur danois Frederik Bille Brahe.

Die Brote und Gebäck sind immer frisch und unglaublich lecker. Die Atmosphäre ist gemütlich und das Personal sehr freundlich. Ein perfekter Ort für ein Frühstück oder einen Snack zwischendurch.

As much as I love the food here, the toilets are always so dirty...I have been so many times at different times of the day and year...I don't mind the cold service but I genuinely mind dirty toilets.

Only filtered coffee. Their products are EXTRAORDINARY however definitely to take away! Unless you order a sandwich; anything from the counter will be put in a paper bag regardless.
