Sofi Bakery cuit du pain avec des céréales provenant de petits agriculteurs biologiques d’Europe du Nord. La boulangerie de quartier située à Berlin-Mitte travaille selon le principe d’une boulangerie artisanale honnête, avec le moins d’interventions possible, et accorde une importance particulière à l’origine, aux matières premières et au processus de fabrication.
La transposition des idées du mouvement Slow à la fabrication du pain est au cœur de son approche. Sofi considère la boulangerie comme une tradition artisanale et s’intéresse aux conséquences de la production alimentaire industrialisée. La sélection des céréales commence par le sol, dont l’importance pour la qualité des grains est comparée à celle du sol pour le vin. Sofi Bakery est née d’une collaboration entre Slowness et le cuisinier et restaurateur danois Frederik Bille Brahe.

Loved it!
The flavors of the pastries are nice, the Morning Bun is my favorite (even though you forgot the orange zest last time). However the service is a bit meh and things quite pricey for the size you get
Haven’t eaten everything yet, but the baguette is perfect. Crunchy, slightly sour, soft inside. I’ll be back :)
